Honey Wheat Bread

This is not your Momma's brick-of-a-loaf-dense-cardboard whole wheat bread. This is light and fluffy and tasty 100% Honey Whole Wheat Bread!!! Yumm-o!

1 1/4 c warm water
3 c whole wheat flour
1/3 c gluten
1/4 c honey
1 1/4 ts salt
1 1/2 tbsp canola or olive oil
2 ts yeast

Mix together warm water, salt, honey and yeast. Let sit for about 5 minutes until nice and bubbly. Add oil, flour, and gluten. Knead until smooth. Place in greased bowl, cover and let sit for 1 1/2 hours. Punch down and form into loaf. Place in bread pan and cover with towel. Let rise in warm place for about 1 hour or until it rises over the pan and looks like a nice loaf of bread. Bake at 350 for about 30-35 minutes.

Yields 1 loaf.
