Protein Pancake

I used wheat flour instead of baking mix and added almonds. :-)


Skip the banana and syrup in the final recipe and you have a high protein low sugar breakfast. I'd add berries to the top instead of a banana if you are diabetic or watching sugars.

Mexican Corn Dip

Well.... Hello. Long time, no new recipes. It is fall again and time to start cooking. :) Enjoy this gem:





Eat this deliciousness with tortilla chips.

3 cans whole corn, drained
1 cup sour cream
3/4 mayonnaise
1 ts cumin
1/2 ts black pepper
1 can rotel, drained
2-3 cups shredded cheddar cheese
1/2 cup chopped green onions
1/3 cup green chiles
A bag or two of your favorite tortilla chips

Mix all ingredients together, cover and chill.

Warning: Do not bring this dip to dinner parties unless you want a thousand people asking for the recipe!!!

Artisan Bread

Have any of you ever heard of Artisan Bread in 5 minutes A Day???

I won one of there new cook books... Healthy Bread in 5 Minutes A Day.

I got the book and made the Whole Wheat Brown Rice Artisan Bread.  Can I just tell you that it is amazing?? And amazingly easy!!!!  The chewiest yummiest artisan bread I have ever made. 










You have to go get the book!  It ROCKS! 

I want to create some of my own recipes based off of it.  So stay tuned!!!

First Sewing Tutorial EVER!!!

Low Carb: Chicken Bake

For the my peeps who are low-carbing it, here is one for you!





Low Carb Italian Chicken Bake

3-4 chicken breast
2 tbsp oil (I used coconut oil)
1 can Italian diced tomatoes
1/4 cup balsamic vinegar
1/4 cup parmesan cheese
1 ts garlic powder
1/4 cup chopped onions
1/2 cup mozzarella cheese

Preheat over to 425.

Brown chicken breast in oil with onions.

Place chicken and onions and oil/juices into baking dish.

Mix tomatoes, garlic and vinegar. Spoon on to chicken.

Sprinkle with Parmesan and mozzarella cheese.

Cover with foil and bake for 20 minutes.

Remove foil and let bake for 10 more minutes or until cheese is slightly brown and chicken is thoroughly cooked.

We served it with some steamed broccoli. This is a great low carb alternative to the breaded chicken parmesan. It is really easy and satisfies the craving for Italian that often get neglected when going low carb.

Now if only I could get my baby to eat this!!! But that's a story for another day.... Soon.

Time to Eat Healthier

Whoa!

I didn't realize I had gotten so fat! Those 5 lbs I gained over the holidays are really showing.

Refreshing!!!

The diet I am on is very restrictive. I needed something refreshing and this slush fit the bill perfectly! Here you go all you New Year's weight losers!



Raspberry Lemon Slush

1/4 cup lemon juice
10 ice cubes
8 frozen raspberries (or any berry)
3/4 cup cold water
3 packets of Truvia (stevia no cal sweetener)



Blend and enjoy! I sure love my Magic Bullet. 10 seconds away from pure bliss.

Too bad I can't top this with some whipped cream! Well soon enough. In a little while I get to transition to low carb and no so many restrictions!!!
