Oh my, lots of things have been cooking over here.
In the kitchen, a new favorite:
Chicken Tortilla Soup
32 oz chicken broth
2 chicken breast
1/2 c rice
2 ts cumin
2 tbsp lime juice
1 can whole corn, drained
1 cup salsa
1 sm can green chiles
Corn tortilla chips
Dice chicken breast and cook in heavy bottom stew pot with a little cooking spray. Add 32 oz chicken broth, rice and cumin. Bring to a boil, reduce heat and cover. Simmer for about 20 minutes. Add the rest of the ingredients and simmer for 5-10 minutes. Crunch up corn tortilla chips into soup and serve immediately. You can even sprinkle a little cheese into the soup! Yumm-o!
About 6 servings at 250 calories per serving! Healthy too!

Also, my darling husband is making me a craft space in the storage room. I am excited. Maybe he is getting sick of my craft mess in the family room!

That soup sounds AWESOME. I think I will have to try it sometime soon. LOVE chips in soup! Anything crunchy is good actually. Have you ever tried croutons? Surprisingly delicious!
