Just a few pointers:
Works the best with WHITE wheat. The hard red didn't turn out as well but not bad. FYI just about all wheat flour from the store is made from hard red. Look for hard white or mix 3/4 wheat with 1/4 white all purpose flour.
DO NOT heat milk mixture to more than 120 degrees and then add to your yeast mix. You will kill the yeast and get bricks for cinnamon rolls. If you don't have a candy thermometer, you can judge it with your finger. At 120 degrees you can still stick your finger in and it isn't too hot, just very very warm, a little warmer than a hot tub would be.
Lastly, YES this makes a huge batch... But you'll need them for how fast they disappear!

Looks yummy! I had started doing alot of baking with whole wheat but now D can't eat it. Wonder if it would work well with all white flour?
ReplyDeleteIt would Joy. You just have to use more if you are using white flour. Just keep adding a cup at a time until you get the dough managable without being sticky. Just be careful not to add too much. You don't want dry dough.
