This is my favorite Mexican casserole. Pretty cheap and easy too!
3-4 chicken breast, cooked and chopped
1 can cream of chicken soup
1 can cream of mushroom soup
1 cup milk
1 onion, chopped
1 sm can chopped green chiles
1 dozen corn tortillas
3 cups shredded cheese
Mix together all ingredients except cheese and tortillas. Spray a 9x13 pan with cooking spray. Rip 6 tortillas and lay in bottom of pan. Top with 1/2 of the chicken mixture. Rip up remaining tortillas and lay on top. Top with remaining chicken mixture and cheese. Cover with foil and bake at 350 for 30 minutes. Remove foil and broil for about 3 minutes to slightly brown the top. VoilĂ ! Viva la chicken!
