Canning: More Apples!

The last of the apple canning is complete in the Momma Chef kitchen. (remember my apple craze at Walmart... Apples for 50cents per pound).

I decided to can some apple pie filling. It was easy as pie... Haha... I love food jokes.




Here is what you need:

5-7 quart jars, lids and rings
About 6.5 lbs of apples
5 cups white sugar
1 cup corn starch
1 tbsp cinnamon
1 ts Ginger
1/2 ts nutmeg
2 ts salt
11 cups water
3 tbsp lemon juice

Peel, core and slice the apples.

In the meantime, boil water to sterilize the jars, lids and rings.

Mix all dry ingredients in a pot. Stir in water and bring to a boil. Stir until thick then remove from heat and add lemon juice.

Pack apples into hot jars.

Pour sauce over apples to 1/2 inch from top of jar.

Poke a spoon or knife into the jar to remove air bubbles.

Top off with sauce to 1/2 inch of top.

Seal with lids and rings and boil in a water bath for 20 minutes.

Remove from bath and let cool. Check lids for seal and voilĂ ! Homemade apple pie filling for about 1/4 of the store price!
