Grandma Wolford's Chicken and Rice

One of my fabulous friends made this dish last night. I was amazed that how easy it was. Plus it is a one pot meal with ingredients that most people have on hand!




Grandma Wolford's Chicken and Rice

1 stick of butter
1 small onion, chopped
2 stalks celery, chopped
1 to 1 1/2 lbs of chicken (breasts and thighs)
Salt to taste
1 1/2 cup rice
3 to 4 cups water
Flour for dredging

In a large oven safe pan, melt the butter.

Flour the chicken and brown well in the butter.

Leave chicken in the pan and add rice, celery, onion, salt and water.

Cover with lid or foil and bake at 300 for 1 to 1 1/2 hours. Or bake at 200 for 3 hours.

Perfect meal to put in the oven before church and come home to a hot meal all ready to go!
