What's Cooking

Food:

What a crazy night! I hate to say this, but a bucket of chicken from Walmart was dinner! Yikes. BUT here is a fabulous recipe I made for Valentine's day:

White Bean and Spinach Soup with Tomato Basil Turkey Sausage

7 cups cooked white beans
32 oz chicken broth, divided
16 oz chicken or turkey sausage (like brats)
9oz bag of spinach, coursely chopped
Salt and pepper
1 onion, chopped

Chop up and sauté sausage in 1/4 cup broth. Add onion and brown. Meanwhile, combine 2 cup broth and 3 cups beans in blender and purée. Set aside. Add remaining broth and spinach to sausage and simmer until spinach is wilted, about 5 minutes. Add bean purée and remaining 4 cups of beans. Simmer for 10-15 minutes. Salt and pepper to taste and enjoy! Yummy! Serve with some whole wheat bread or crackers.

Oh and here was our heart shaped carrot cake... But no recipe. I didn't feel it was fantastic enough to post.

I also made this Valentine pot holder out of 2 extra squares from B's quilt. Now she is using it as a place mat on her pink princess table:






Everything else is still a work in progress. More to come.

  1. Love your letters! And I have been wanting to make some new hotpads! How cute! Did you use a special batting in them???

  2. Hi Joy! The letters are so easy and for the hot pads you can either use insulating batting or regular cotton batting. I had some cotton batting left over from a reupholster job so I used a piece of that. I here the regular blanket batting can melt if you use it in hot pads.
