Giant Breakfast Cookies

Yesterday I got this in the mail!





It is my Whole Grain Cookie Mix from Joseph's Grainery!!!!  I was so excited to use it.  Being 10am on Sunday morning I thought to myself, "hmmmmm, I should make some cookies for breakfast".  I figured if I added some fruit and nuts and whole grain cookie mix, it would be wholesome homemade breakfast.

 Any excuse to eat cookies is a good excuse. Right?!

Here is what I came up with:







Giant Whole Grain Breakfast Cookies

2/3 cup brown sugar
6 Tbsp butter
1 Tbsp milk
1/2 Tbsp real vanilla
1 Tbsp pureed pumpkin, or yogurt, or sour cream or apple sauce
1 cup + 2 Tbsp Joseph's Grainery Whole Grain Cookie Mix
1/2 cup finely chopped apple
1/2 cup rough chopped almonds

Cream together the butter and the brown sugar.

Add vanilla, milk and pumpkin (or whatever you chose to use). Mix.

Add flour and mix.

Stir in nuts and apple chunks.


Bake for 10-12 minutes


Makes 8 GIANT cookies.
