Whole Wheat Sour Dough Bread

First make a sour dough starter... Whole wheat of course! Yes, making sour dough starter takes time, but you will not be sorry!!! It is worth it!

With the starter you can make yummy bread and yummy sour dough pancakes!!!

Starter:

2 1/2 ts yeast
2 c warm water
2 c whole white wheat flour

Mix all ingredients. Place in glass bowl or plastic bowl. Loosely cover with plastic wrap and let sit at room temperature for 24 hrs. Then stir using a non-metal utensil, like a wooden spoon. Stir daily. Let sit at room temp for approximately 3-4 days. Then use!!!


Whole Wheat Sour Dough Bread


1 1/4 cup starter
3/4 cup warm water
1 3/4 ts salt
3 1/2 cup whole white wheat flour
3 tbsp sugar
1 3/4 ts yeast
4 tbsp vital wheat gluten

Mix all ingredients until it forms a dough.

Cover and let rise for 2 hours.

Punch down and rise for 1 1/2 hours.

Punch down and form into a round loaf let rise for 1 hour.

Preheat over to 460 degrees with a bread pan full of water on the bottom rack to create steam. I use a pizza stone to bake round breads. Place stone in to over to get hot.

Move loaf to hot stone that is sprinkled with corn meal.

Let rise 30 minutes.

Bake at 460 for 20-25 minutes.
