Whole Wheat Almond Raisin Biscotti


Biscotti, for those of you who have never had it, is a hard baked good that is like a hard cookie.  It goes great with your morning hot cocoa.  I adapted these from a recipe that used white flour and white sugar.  BUT you would never know this is a HEALTHY food, they taste WONDERFUL!  My daughter was eating one like a gave her a cookie, she thinks these are a special treat... little does she know they are pretty healthy for her!

Whole Wheat Almond Raisin Biscotti

1 1/2 c whole wheat flour
1 ts baking powder
1/2 c chopped or slivered almonds
1/4 c raisins
1/4 ts salt
1/3 c honey
2 eggs
1 ts vanilla

Whisk together the flour, baking powder, almonds, raisins and salt.  In a separate bowl mix together the honey, eggs, and vanilla.  Add the wet mix into the flour mix.  Using a wooden spoon, mix thoroughly.  Spray your hands with cooking spray and form dough into a 1 inch thick loaf that is about 10inches by 5 inches.  You can really form it into whatever length and width you want as long as it is 1 inch thick.  Place on greased cookie sheet and bake for 20-25 minutes on 350 degrees. 

Take the loaf off of the cookie sheet and cool for about 15 minutes.  Using a cutting board and serrated knife, cut the biscotti loaf into pieces that are about 3/4inch to 1inch thick.  Place biscotti back onto the cookie sheet with one side exposed.  Bake for 10 minutes at 300 degrees.  Flip biscotti over so other side is exposed and bake for 10-13 minutes (also at 300).  Cool and store in an airtight container for up to 1 month.

Ooooo: To jazz these up a little you can get almond bark and dip them half way into the melted chocolate.  These make a wonderful little treat for a gift basket.
