Whole Wheat Honey Bagels

These are yummy yummy yummy.  I made them with white wheat this time, instead of red... much more fluffy.  I almost feel like using white wheat is cheating somehow.  The breads come out so much like white bread!

1 tbsp yeast
1 1/2 cup warm water
4 Tbsp honey
1 ts salt
4 1/2 cups white wheat flour (or 3 3/4 cup red wheat flour + 1/3 cup gluten)

Let yeast proof in the warm water with salt and honey for 5 minutes.  Add flour and knead until smooth.  Let dough raise for 20 minutes.  Cut into 6-8 balls, cover and let sit for 10 minutes, then poke a hole in them to form the bagels.  Cover and let sit for 20 minutes.  Boil a pot of water while waiting.  Then boil the bagels 3-4 at a time.  Drain with slotted spatula and place on greased cookie sheet.  Bake at 350 for 25-35 minutes.

We just made some tonight and will be using them for hamburgers tomorrow night!  My brother-in-law has been dying for a juicy burger on a homemade bagel.
