Turkey Veggie Nuggets

This isn't the most photogenic food I have ever made, nor am I a great photographer.... but BOY DID THEY TASTE GOOD!!!  I got the idea from HERE and decided to make them with what I had on hand.  I love making foods that get my kids to eat veggies in the most unexpected places and love it.... like these "Eat your fruit and veggies" Yummy Muffins!!!

Here's what you need:

3 cups of thawed veggies (i used broccoli)
2 eggs
16 oz ground turkey
2 cups Rice Crispies cereal, crushed
onion powder
garlic powder
salt and pepper

Here's what you do:

Blend veggies in the blender to chop up very finely.





Add veggies to the ground turkey and add eggs and seasoning.  I didn't measure my seasonings... I just sprinkle til it looks good!







After meat mixture of made, spread some rice crispies on the counter and pop some meat on top.  Squish down to about 1/2 thick, then sprinkle a little more rice crispies on top.

My daughter chose a Christmas tree and a star cookie cutter to make the nuggets.






Place nuggets on a greased cookie sheet.






Bake at 400 for about 15 minutes.  Flip the nuggets over at about 7 minutes so both sides get nice and brown.

Serve with your favorite dip.  We love RANCH!
