Homemade Corn Tortillas

These yummy tortillas were made into enchiladas today over here at my house!

2 cups corn flour
1 ts salt
1 1/4 cups HOT water
1 ts oil

Mix all ingredients together to form spongy dough. Let sit 5 minutes.

To roll and cook:

Heat comal, cast iron skillet or heavy bottomed skillet over medium heat.

Spray counter with cooking spray. Place a large piece of plastic wrap on top of sprayed counter. Spray helps plastic to stick in place. Then form a golf balls sized ball of dough and place on plastic. Put another piece of plastic on top of dough. Using a rolling pin (or a cup) roll the dough into a tortilla while sandwiches bewteen plastic. Careful not to get it too thin. Carefully grab it from between the plastic and place on greased skillet. Cook for about 30-45 sec on each side. I like to move it around a little with my fingers to prevent it from sticking.

VoilĂ ! Your very own corn tortillas. They make great chips too. Just slice them up and fry them or bake them.

  2. Hi Sonya! Thanks for visiting! They can easily be rolled with the rolling pin if you use the plastic wrap method. Just be gentle and remember not to roll too thin or they will tear. It takes a little practice and mine don't always come out perfectly round, but they are close and taste GREAT! Enjoy. -Sheena AKA Momma Chef!
